Tummy Warming Tomato Stir Fry

 

You will need 

  • Two tins canned tomatoes
  • Small tin corn
  • Two onions
  • Two zucchinis
  • One small capsicum
  • Herbs, garlic, salt and pepper to taste
  • 1 tablespoon butter or margarine

 

Dice the onions and zucchini - place in frypan or saucepan - sauté with butter or margarine until tender.

Add canned tomatoes and corn and finely chopped capsicum.  Simmer for about 5 minutes until liquid is nearly absorbed.  Add the herbs, garlic, salt and pepper to taste. 

Normally we also add mushrooms, but the vegetable buyer of our shopping (not the female of this partnership) forgot!  The mushies add extra flavour and thickening.

 

Serve with sausages, chicken fillets or other meat.  And watch out - it is HOT HOT HOT!!!! Note the steam coming off the plate!
