Potato Latkes

These little potato pancakes are a pleasant and unusual alternative to chips or roast potatoes

 

You will need 

  • 3 good sized potatoes
  • 1/2 cup self raising flour
  • 1 medium onion
  • Nutmeg - 1 teaspoon
  • Chopped chives - 1 tablespoon
  • 2 eggs
  • Garlic, salt and pepper to taste
  • Small tin creamed corn
  • Oil for very shallow frying

 

First grate the potatoes into a bowl. Cover completely with cold water and leave sit for about an hour. Drain well and pat dry with a clean tea towel - reduce moisture as much as possible. In the meantime, grate or chop the onion very finely.  

Beat together the flour, eggs, onion, creamed corn, nutmeg, chopped garlic and chives, making a thick paste.  Mix in potato and season to taste.

Add a thin layer of oil to the frypan and drop in about a tablespoon of the potato mixture.

 

Cook the potato pancake until golden brown, then flip over and cook the other side.  Drain on paper towel and if you can keep the vultures away, keep aside until you have cooked the rest of the mixture. 

Great for serving with BBQ sausages and tomatoes or with steak and vegetables or salad.
