Coconut Pancakes - Robyn Cook

 

   

 

This recipe is ideal for those new to camping and the great outdoors. This month we feature page 32 of Robyn Cook’s “Holiday Cookbook”. There is a review of the book if you follow the link. We are off to Armstrong Creek and I will be doing the making and photographs there as we will be using an open fire seeing it's the middle of winter. So you won’t have any photographs for a few days till we get back from our late working weekend. In the meantime, just reading the following will start your mouth watering - the perfect snack or breakfast for these cold winter days! Why wait for the photos - they sound so simple you could do it NOW!!!!

 

   

 

 

You will need

  • 1 cup self raising flour

  • 1 egg

  • ½ cup coconut milk

  • ¾ cup milk

  • 1 tablespoon sugar

  • 1 tablespoon desiccated coconut

  • butter

 

 

     

 

  • Mix all ingredients together until smooth and creamy.
  • Let sit for half an hour
  • Mix again and add more milk if the batter is too thick.
  • Melt a little butter in a heated frypan.
  • Pour a large spoonful of batter onto the frypan and cook at a moderate heat.
  • Turn pancake when bubbles form on top, cook the other side and serve with topping of your choice.

 

     

 

TIP:- The trick to making pancakes on an open fire is to have no flame and just use the coals. Notice that even though I have a very low fire that the pancakes on the right are ever so slightly overdone. Don't worry about the shape too much. These are the wonkiest ones I have ever made as we left the big spoon at home and it was darn hard to just pour a smidgen in the pan!

 

     

 

Robyn recommends two yummy sauces - both of which sound delicious for Coconut Pancakes.

Banana and Orange Sauce

  • 4 Cavendish bananas
  • Juice of 2 oranges
  • 2 teaspoons raw sugar
  • 1 teaspoon butter.

Slice bananas into rounds. In a small saucepan, gently simmer the bananas, butter, juice and sugar until soft and creamy smooth.

Blueberry and Ricotta Sauce

  • 1 cup tinned blueberries
  • ½ cup smooth ricotta cheese
  • ¼ cup orange juice
  • 2 teaspoons sugar

Place all ingredients in a saucepan and simmer gently for 3 to 5 minutes.
