A-Tacos

 

You will need 

  • 50 grams cheese - grated is easiest
  • Two onions, chopped
  • One zucchini, chopped
  • One small capsicum, finely chopped
  • Herbs, garlic, salt and pepper to taste
  • 1 tablespoon butter or margarine or olive oil
  • Eschalots - optional
  • Tin of Sanitarium casserole mince - 415g
  • Shredded lettuce
  • Tomato - thinly sliced
  • Tin of Pineapple Thins - Golden Circle
  • Packet of Taco Shells
  • 2 X tablespoons of dried tomato paste

 

This meal takes 20 minutes from start to finish and there are dozens of variations. It is an adaption of traditional Tacos using either mince or a Sanitarium meat substitute. If you have never tried this product give it a go as you will be pleasantly surprised and your other half wont know the difference! Yes - it's healthy.

Dice the onions and zucchini - place in frypan or saucepan - sauté with butter or margarine or olive oil until tender.

 

 

Add the capsicum, then the herbs, garlic, salt and pepper to taste. It is VERY important to keep the mixture fairly dry otherwise you end up with very sloppy and soggy Tacos that are very messy to eat! Never add tinned tomatoes! You can add a touch of chilli sauce or even a tin of red kidney beans if you want to feed more bodies!

Heating the shells is a bit tricky if you only have a two burner stove. Just quickly heat them using a non-stick frypan. If you have a microwave just heat for one to two minutes. If you have a grill just arrange them as per the photo.

 

Place all the salad ingredients in bowls and place on the table. To assemble a Taco it's more fun to have everyone make their own! Place half a thin pineapple slice in a shell, a bit of lettuce, a thin slice of tomato. Put in a tablespoon or two of the mince mixture and finish with a sprinkling of cheese. Avocados go fantastically well with Taco either on the plate or in the Taco itself.  Delicious!!!

 

Garnish with anything you have! Please excuse the no table cloth! So till next month - happy camping and great cooking.
