A-Soup or Two for Winter

 

     

 

Sweet Potato and Leek and Lentil Soup

 


You will need

  • 3 leeks

  • 2 medium to large sweet potatoes

  • 2 stick celery

  • 2 rashers bacon

  • 1 cup red lentils

  • 1-1/4 litres water

  • 2 chicken or vegetable stock cubes

  • 2 tablespoons olive oil

  • 2 tablespoons chopped parsley

  • 2 garlic cloves

  • Salt and pepper and other herbs to taste

  • Optional 1/2 cup cream

 

 

     

 

Add olive oil to saucepan.  Add washed and sliced leeks, chopped celery and chopped bacon.

Cook over low heat for 10 minutes with the lid on.

Add washed lentils, water and crumbled stock cubes.

Bring to boil, reduce heat and simmer, still with the lid on the pan) for about 30 minutes. Take off stove.

Use your stab mixer or whiska to blend. Return to stove, add cream, season with salt pepper and herbs, reheat gently and finally stir in parsley.

Serve immediately.

 

     

 

If you make a big batch, don't add the cream except to what you are going to eat that night.  The rest will keep in the fridge in a covered container for two or three days. We have a little 150 watt inverter in our A'van and this lets us use the stab mixer when we miles from anywhere in the bush.

 


 

Potato and Tomato Soup

You will need

  • 4 medium potatoes

  • 4 medium tomatoes

  • 2 large onions

  • 1 stick celery

  • 1/2 teaspoon basil

  • 1/2 teaspoon oregano

  • 2 cloves garlic

  • 1-1/4 litres water

  • 3 chicken or vegetable stock cubes

  • 3 tablespoons dried tomato paste

  • Salt and pepper and other herbs to taste

  • Optional 1/4 cup cream

Wash and chop all vegetables.

Put in saucepan with basil, oregano, tomato paste, garlic, water and crumbled stock cubes.

Bring to boil, reduce heat and simmer with the lid on for 25 to 30 minutes or until the vegetables are very tender.

Use your stab mixer or whiska to blend. Add salt and pepper to taste. Add cream, reheat gently and serve hot.

Serve immediately.

The same as the leek and lentil soup, if you don't think you will eat the lot in one sitting, only add the cream to the amount you will eat and the rest will keep in the fridge for another night.

Our stab mixer is only 35 watts and runs perfectly off the inverter if you're not on a powered site.

And yes Rex does really eat (or should that be drink? soup.
